Lambada Cake Recipe

It's time for another recipe. This a old love of mine. I got this recipe from my grandma. She makes the best Lambada cake ever. Lambada cake is a delicious summery cake. It has a nice and light biscuit, fresh orange cream, delicious white cream and crispy chocolate glaze. It looks like it's complicated but it really isn't. You just need to follow the recipe.



Ingredients

               Biscuit                                            Yellow cream                        White cream

         6 egg yolks                                      1 L of orange juice                  6 tablespoons of flour
         6 egg whites                                   3 vanilla pudding                    6 tablespoons of icing sugar
         150 grams of sugar                       7 tablespoons of sugar            5 deciliter of milk
         150 grams of flour                                                                            250 grams of butter
         1 teaspoon of vanilla sugar
         1 teaspoon of baking powder



Preparation


  Biscuit 

  • Preheat oven on 180 degrees.
  • Separate egg yolks from egg whites.
  • Mix egg whites until you got a nice firm snow.
  • Mix egg yolks with sugar and vanilla sugar. Add flour and baking powder.Mix everything together.
  • Add egg white and mix it with spatula, 
  • Pour the mixture in the pan.
  • Bake it for 12-15 minutes. Check with the toothpick if it's baked. Leave it to cool down. 


  Yellow cream

  • Put vanilla pudding and sugar in a bowl and mix with a little bit of orange juice.
  • Rest of the juice boil.
  • Put the vanilla pudding in the boiled juice and mix for 2 minutes. 
  • Pour a hot cream on the biscuit. 

  White cream 

  • Mix flour and sugar wit a little bit of milk.
  • Boil it whit the rest of the milk.
  • When it's got a nice thick texture put it aside to cool down. 
  • Mix butter until it's smooth.
  • Add it to cream. 

After you put yellow cream on the biscuit and let it cool down put the white cream over it. Make a glaze from 100 grams of chocolate and 70 grams of butter. Pour it over the cooled white cream. 



It maybe looks a little bit messy on this photo but I like that rustic look. You can make it a round baking pan or in a tin. I sometimes make it as a cake. It would be great for Summer parties or birthdays.
