Cheese Pie You Won't Stop Eating

I've baked quite a lot of different pies and I must say that this is my absolute favorite one. It's so soft at the inside but crisp on the outside. If you're into light and not too sweet cakes then you'll love this one.  I've tried a few recipes for cheese pie but this one is by far the best one so I just had to share it with you. 


The trickiest part about any pie is the crust. If the crust recipe is too dry or too wet it won't turn out good as you're not going to be able to roll it out without it cracking. And cracking is definitely something you don't want. I was so impressed when I started to roll out this crust as it didn't cracked even a little bit and I managed to roll it out so much. 




INGREDIENTS 
   
               CRUST                                                                                              FILLING 

        30 dag of flour                                                                                    2 egg yolks                              
        10 dag of butter                                                                                  15 dag of sugar 
        7 dag of sugar                                                                                     25 dag of cottage cheese
        1 egg yolk                                                                                             one lemon zest
        little bit of baking soda                                                                     pinch of salt
        2-3 tablespoons of sour creme                                                    








PREPARATION 

              CRUST 

  • If you have a food processor you can just put all the ingredients in it and mix it. But I like to do everything with my hands.
  • So I first left butter on room temperature for a few minutes so that it gets softer. 
  • I sifted the flour in bigger bowl and then rubbed in butter sliced on little cubes. After the butter and flour combine I  then added sugar, baking soda, egg yolk and sour creme. 
  • Now that all the ingredients are in I knead a soft dough. 
  • Leave it on cold area for about 30 minutes. 
  • After 30 minutes divide dough in two little parts and roll out one part as the size of the baking pan. Do the same with the other part.

FILLING

  • Mix together egg yolks and sugar. 
  • Add cheese, limun zest, pinch of salt and mix it all together.  
  • You can adjust the flavor by adding more sugar or raisins. 

Put first crust in the baking pan and pour the filling in it. Then put on the second crust and make little hols with fork. Bake it on 175 degrees until it gets a nice and gold color. It depends o what kind of oven you have. I baked mine for about 30 minutes.
