When it comes to cooking I'm always searching for easy, fast, and delicious recipes that can be made in under 30 minutes. Usually, that means making pasta. Honesty, nothing beats the comforting aroma of a delicious pasta dish simmering on the stove, especially when it's made with love and shared with someone special.

Recipe: Creamy Vegetable Pasta for Two


Ingredients:


- 150g spaghetti

- 1 cup frozen vegetable mix (corn, cauliflower, broccoli, beans, carrots)

- 1 small onion, chopped

- 2 cloves garlic, minced

- Salt and pepper to taste

- Olive oil for cooking

- 1 cup milk

- 2 teaspoons all-purpose flour


Instructions:


1. Start by cooking the spaghetti (or any other pasta) according to the package instructions until al dente. Reserve about 1/2 cup of pasta water before draining and set aside.

2. While the spaghetti is cooking, heat a tablespoon of any oil or butter in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 2-3 minutes.

3. Add the frozen vegetable mix to the skillet and continue to cook, stirring occasionally, until the vegetables are thawed and softened, about 5-7 minutes. If needed, add a splash of water to help the vegetables cook evenly.

4. Once the vegetables are softened, season them with salt and pepper to taste.

5. In a small bowl, mix the milk and all-purpose flour until well combined to make a slurry.

6. Pour the milk mixture into the skillet with the vegetables, stirring continuously to prevent lumps from forming. Cook for about 5-7 minutes, or until the sauce thickens and coats the vegetables.

7. Gradually add the reserved pasta water to the skillet, a little at a time, until the sauce reaches your desired consistency. Stir well after each addition.

8. Once the sauce has reached the desired thickness, add the cooked spaghetti to the skillet and toss everything together until the spaghetti is evenly coated with the sauce and vegetables.

9. Adjust the seasoning with salt and pepper if necessary, and serve the pasta hot, garnished with fresh herbs or grated cheese if desired.

Additional Tips


You can make this dish with any pasta shape or rice. If you have fresh vegetables you can chop them. In the summer I love to add homegrown zucchini, cherry tomatoes, paprika... You can easily make this dish suit your taste. If you don't want to eat this vegetable version you can add some chicken to extra protein or any other meat you prefer. You can make it more creamy if you add more milk or add some cheese.
