Whenever I want to eat something sweet but I don’t know what to bake, I like to search the internet for the easiest, quickest, and hopefully chocolatey recipes. That is exactly how I stumbled upon this recipe, and as soon as I saw it, I made it. It turned out amazing.

Ingredients
For the cake:
1 egg
5 tablespoons sugar (100 g)
2 tablespoons cocoa powder (25 g)
3 tablespoons ground walnuts or hazelnuts (30 g)
1 level teaspoon baking soda
1 level teaspoon baking powder
150 g flour
200 g homemade strawberry jam (about 5 tablespoons)
1/2 teaspoon cinnamon
200 ml milk
4 tablespoons oil
For spreading:
A few tablespoons of strawberry jam (or any jam of your choice)
For the glaze:
80 g dark cooking chocolate
1 tablespoon oil
Instructions
1. Prepare the batter
In a bowl, whisk the egg with sugar until combined. Add the plum jam, milk, and oil, and mix well.
In a separate bowl, combine the sifted flour, cocoa powder, cinnamon, baking powder, and baking soda.
Gradually add the dry ingredients to the wet mixture, whisking gently (no mixer needed). Finally, stir in the ground walnuts. The batter should be medium-thick and pourable.
2. Optional addition
If you like, you can add some chopped chocolate chips.
3. Bake the cake
Pour the batter into a greased loaf pan or any narrow baking pan.
Bake in a preheated oven at 190°C (375°F). Once a crust forms on top, slightly reduce the temperature. Bake for about 35–40 minutes, depending on your oven.
Turn the baked cake onto a serving plate.
(Optional: lightly sprinkle with a bit of rum for extra flavor.)
While still warm, generously spread jam over the top, leaving about 1 cm around the edges for a cleaner look.
4. Make the chocolate glaze
Melt the chocolate with oil using a double boiler (or microwave in short intervals).
Pour the melted chocolate over the cake and let it set.
Tips for First-Time Bakers
Measure ingredients carefully
Try to be as precise as possible, especially with flour and cocoa powder. If you don’t have a scale, level your spoons instead of overfilling them.
Don’t overmix the batter
Once you combine wet and dry ingredients, mix just until everything is incorporated. Overmixing can make the cake dense instead of soft.
