Eggs are my go-to breakfast ingredient. They're super filling, full of protein, and help keep me full longer, which is a must since I get hungry pretty quickly in the morning.

I’m always on the lookout for new egg-based recipes, and when I first discovered egg muffins, I knew I had to try them. Of course, I made a few tweaks to suit my taste (and what I had in the fridge), and they turned out even better than I expected.

The first time I made them, I skipped the milk and they came out a little too eggy for my liking. Since then, I’ve found the perfect balance, and now they’re a regular part of my breakfast routine.

Ingredients (Metric):


7 large eggs

60 ml milk (optional, for fluffier texture)

75 g diced bell peppers

30 g chopped spinach

30 g shredded cheese

30 g diced onions

Salt & pepper to taste

Optional: 50 g cooked bacon or ham pieces


Instructions:

  1. Preheat your oven to 180°C (fan 160°C) and lightly grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Stir in your chopped veggies, cheese, and any meat you’re using.
  4. Pour the mixture evenly into the muffin cups, fill each about 3/4 full.
  5. Bake for 18–22 minutes, or until the tops are set and lightly golden.
  6. Let them cool slightly before removing from the tin.

My Tips for the Best Egg Muffins


Don’t skip the milk (or try a spoon of cottage cheese), it helps cut the "eggy" texture and makes them creamier.

If you want a lighter version, try using more egg whites and fewer yolks.

Use what you already have in your fridge! I love adding seasonal vegetables, cured meats, and a bit of cheese for flavor.

I use a regular muffin tin because I love how it gives the muffins a golden, slightly crispy crust, but silicone cups work great for easy cleanup.


How to Store


I usually make a batch the night before and keep them in the fridge in an airtight container. The next morning, just pop them in the microwave for about 30 seconds and they’re good to go. Super convenient!
